  • 1 Tbsp Unsalted Butter Plus extra for greasing

In a medium saucepan, pour in the sweetened condensed milk. Sift in the cocoa powder to avoid clumps and add the butter.

  • Cook the Mixture:
Place the saucepan over medium heat. Stir continuously with a wooden spoon or silicone spatula to prevent the mixture from sticking to the pan.

  • Thicken the Mixture:
Continue stirring for about 10-15 minutes, until the mixture thickens, becomes smooth, and starts to pull away from the bottom and sides of the pan. When it reaches this stage, the mixture will hold its shape when you tilt the pan.

  • Cool the Mixture:
Remove from heat and transfer the brigadeiro mixture onto a greased plate or tray. Let it cool to room temperature, about 30 minutes.
  • Shape the Brigadeiros:
Once cooled, grease your hands with a little butter. Use a tablespoon or cookie scoop to portion out the mixture, then roll it between your hands to form small balls.

Notes

Texture Check: To ensure the mixture is ready, run your spoon through it. If it leaves a trail that takes a second to fill back in, it’s thick enough.
Avoid Burning: Cook on medium heat and stir constantly to prevent the chocolate from burning.
Topping Ideas: While chocolate sprinkles are traditional, try using shredded coconut, crushed nuts, or colorful sprinkles for fun variations.
