Equipment

  • Blender or Food Processor
  • Popsicle molds (silicone or plastic)
  • Popsicle sticks
  • Measuring Cups and Spoons
  • Funnel (optional, for easier pouring)

Ingredients

  • 2 Cups Fresh or frozen fruit (e.g., strawberries, mango, watermelon, or blueberries)
  • ½ Cup Coconut water or freshly squeezed orange juice
  • 1 Tsp Lemon or lime juice (optional, for extra tang)
  • A handful of mint leaves (optional, for added freshness)

Instructions

  • Prepare the Fruit
Wash and peel (if necessary) the fruit. Cut it into smaller chunks for easier blending.
  • Blend the Ingredients
Add the fruit, coconut water (or juice), and optional lemon/lime juice to a blender. Blend until smooth.
For a flavor twist, add a handful of mint leaves.
  • Taste Test
Taste the mixture and adjust with more coconut water or juice if needed. Remember, the fruit's natural sweetness will intensify when frozen.
  • Pour Into Molds
Carefully pour the blended mixture into popsicle molds, leaving a small gap at the top for expansion during freezing. Insert popsicle sticks.
  • Freeze
Place the molds in the freezer and freeze for 4-6 hours, or until completely solid.
  • Unmold and Enjoy
Run the molds under warm water for a few seconds to release the popsicles, then enjoy!

Notes

  • Best Fruits: Choose naturally sweet fruits like ripe mangoes, peaches, or berries for the best results.
  • Layered Popsicles: Blend two or more fruits separately and pour them into molds in layers, freezing each layer slightly before adding the next.
  • Texture: For a chunkier texture, reserve some finely chopped fruit and stir it into the blended mixture before freezing.
  • Storage: Keep popsicles in the mold or wrap them individually in wax paper to avoid sticking.
